Wheat-less Wednesday – Chocolate Peanut Butter Cups

Ingredients:Peanut butter cups

Bottom Layer:

  • 2 Tbsp melted coconut oil
  • 4 Tbsp smooth organic peanut butter
  • 1/2 tsp vanilla stevia

Top Layer:

  • 2 Tbsp melted coconut oil
  • 4 Tbsp smooth organic peanut butter
  • 1 tsp vanilla stevia
  • 1/4 cup cocoa powder

Instructions:

1. Set 9 mini muffin cups on a plate

2. Stir together ingredients for bottom layer until smooth, and scoop 1 Tbsp of the mixture into each cup.

3. Place plate in the freezer for 5 minutes.

4. Stir together ingredients for the top layer until smooth, and scoop 1 Tbsp. of the mixture into each cup.

5. Place plate in the freezer for 15 minutes.

6. Remove from freezer.

7. Enjoy!

8. Store any extras in your refrigerator.
